Famous for their Pho, To Chau has always had lines of people from early morning until they close at 2:30 pm. Frommer's states they have the "the ne plus ultra of pho in Honolulu". And considering how many restaurants serve this popular soup in Hawaii, it is an amazing compliment for this small spot on River Street in Chinatown. Pho (pronounced fuh), is a traditional Vietnamese rice noodle soup with clear beef broth and various meats and/or fowl added. Many consider the secret to a great Pho is the beef broth and the folks who eat at To Chau say they make the best - thus the lines. It's small, there is no atmosphere and you'll probably have to wait up to 30 minutes for a table (longer on weekends), but once you sit down and add some garnishes to your Pho such as green onions, cilantro, Thai basil and especially Thai hot sauce Sriracha, you'll have experienced what is considered the best Pho in all of Hawaii.
